Vegan Oat & Quinoa Pancakes
I actually made these pancakes quite a while ago, photographed them, and just never got around to putting them on the blog. They were one of the first breakfasts I cooked up when my morning sickness eased up and I felt like a million dollars after eating them. After spending so long eating only what I could stomach, I really felt like I needed some proper hearty nutrition and these pancakes did the trick. I think it was the quinoa in them mostly that my body really liked, but oats are highly recommended during pregnancy and breastfeeding as well so it was probably a bit of both.
The method for these pancakes (although mine look more like little pikelets ) is a bit different to any other pancakes I have made. It’s pretty simple and mess free but I do recommend a good blender for it as the quinoa is whole and needs to be whizzed up nice and smoothly. These are also one of the first vegan pancakes I have made that don’t use banana’s instead of eggs! So for all those people that don’t like mashed up banana, this is a great option and very nutritious too! Lately I have taken to cooking up a huge batch of quinoa and freezing it. If I ever need quinoa it just needs to defrost ( which I do in the microwave) and measure out the amount that I need. The recipe calls for pre cooked quinoa, which does make things a lot quicker in the mornings but feel free to boil up some fresh quinoa for this recipe if you don’t have any pre cooked quinoa on hand. Just boil about 1 cup dry quinoa and it should yield 2 cups cooked quinoa. I would still measure it out after its cooked just to be sure. You can store any left overs in the fridge or freezer to use later.
I posted some snaps of me making these on my Instagram stories when I was making them and I had quite a few questions over where I got my pancake pan from. I used a special eco pancake pan that I got from Biome Eco Store. It is an online store based in Brisbane that sells a whole bunch of eco friendly products. They do beauty and cleaning products as well as food and kitchen stuff and everything in between. Really great shop especially for eco conscious people. The pancake pan I used comes as a set with a flat crepe pan which I used to photograph the final product but the actual pancake pan has perfect little circles for the pancake batter to sit in. I will try my hardest to get a direct link to the products so you can buy directly off this blog post. Im not really good at understanding computers so hopefully it will work! Let me know if any one has issues with it! Now onto the recipe. Oh and make sure to use gluten free oats to keep this recipe completely gluten free if you need to!

- 2 cups pre cooked quinoa ( about 1 cup uncooked quinoa)
- 2 cups rolled oats ( gluten free if necessary)
- 1 TBSP baking powder
- 2 tsp cinnamon
- pinch salt
- 1¾ cups almond milk
- 2 TBSP maple syrup
- 1 tsp vanilla extract
- Process some rolled oats in your blender until they become a flour, or used ready made oat flour
- Add cooked quinoa, baking powder and salt to the blender. Do not process until wet ingredients are added
- In a small bowl mix together almond milk, vanilla and maple syrup.
- Add to the blender and blend until a thick batter forms
- Grease your pancake pan with a little bit of oil ( I used coconut oil spray)
- Add batter to pan. You can make your pancakes as big or small as you like. I poured directly from my blender in to my special pancake pan. The circles were quite small so they made pikelet looking pancakes. To get similar shaped pancakes I would suggest using no more than 2 TBSP of batter per pancake.
- Fry for a few seconds on one side until bubbles form, flip over and cook the other side for a few more minutes. The pancakes are a little mushy on the inside so make sure you do not try and flip them too early as they will fall apart.

- Serve with strawberries and maple syrup or whatever you like
