Dragonfruit Banana Ice-cream
I was thinking about the post I put up for my Cambodian inspired stir fry and was remembering all the dragon fruit I ate on our holiday throughout Asia. They served it every single breakfast and was at every fruit stall. It’s actually quite bland tasting (although I think the pink variety has a stronger flavour) but I simply cant get over how beautiful the fruit is! And of course its good for you too! We are so lucky that dragon fruit grows in North Queensland this time of year. I decided to walk myself down to the markets even though it is much much too hot for the markets at this time of year in Townsville and buy myself some dragonfruit. I then turned them into a banana icecream after being inspired by Blogilates banana ice – cream youtube video. I think its great, because you can eat it as an ice cream or as a breakfast bowl topped with extra fruit and granola or whatever else you like. I made a big batch so I can bring it out for a quick breakfast whenever I feel like. I also think its bright pink so why not make a batch for valentines day? I decided to pimp up my waffles cones for valentines day with some melted dark chocolate dipped in shredded coconut and chopped almonds. The recipe only has 3 ingredients and is 100% vegan, refined sugar free and really yummy!
Dragonfruit Banana Ice-cream | Print |
- 6-7 frozen bananas
- flesh of 3 pink dragnonfruits
- 1 TBSP maple syrup
- Begin by peeling your bananas and slicing them into smaller pieces
- Freeze the banana’s overnight (will last in the freezer a long time)
- When your ready to make your ice – cream, combine your frozen bananas, dragonfruit flesh and maple syrup in a food processor and blend until smooth and creamy
- Eat straight away or store in a container in the freezer and enjoy later
