Dark Chocolate Cherry Truffles

Valentines day is coming soon. We don’t really celebrate it because like most other holidays it is highly commercial but I will take any excuse to make chocolate! As I have mentioned before, I’m really into cherries this year, so I am trying to make the most of them before they go out of season. I was originally planning on making some cherry popsicles but changed my mind and decided to make these cute chocolate cherry truffles for valentines day instead. They are completely raw and have a bitter dark chocolate taste with only a subtle hint of cherry. If your not a fan of dark chocolate then this is probably not the recipe for you, but if you are like me, the darker the better! They kind of remind me of these chocolate truffles I had once when I was little. We had a visitor bring them over as a gift. They were covered in a pretty thick layer of cocoa powder, which I hated because of the bitterness but as soon as you bit down the truffles became super sweet and creamy. I was kind of fascinated with this bitter/sweet combination and I kept having them even though I wasn’t really sure if I liked them. Now I am a huge dark chocolate lover and I cant really get enough of that bitter chocolate taste. Besides chocolate is good for you. Dark Chocolate Cherry Truffles

Recipe type: Dessert
Hazel & Cacao:
Ingredients
  • About 20 fresh cherries - pitted
  • 2 cups almond meal
  • 1 TBSP maple syrup
  • 1 ½ TBSP freshly squeezed orange juice
  • 1 ¼ cup pitted medjool dates
  • 2 TBSP cashew butter (or any nut butter)
  • 1 TBSP coconut oil
  • ⅓ cup raw cacao powder plus extra for rolling
Method
  1. Make your own almond meal by processing raw almonds in a food processor until they turn into a flour consistency or use ready made almond meal
  2. Pit your cherries and dates and add them to the food processor along with the almond meal
  3. Add all reamining ingredients to the food processor and blend until well combined. You may need to add more almond meal if the mixture is too sloppy
  4. Roll into balls and roll around in cacao powder to cover
  5. Place in fridge or freezer for about 20 minutes to set. Enjoy!
