Vegan French Toast
I have posted up a vegan french toast recipe before made with silken tofu which I still really love mostly because it forms a nice crust, but for those who like to avoid soy this french toast recipe is a really yummy alternative. To be fair the recipe is not purely my own but only slightly adapted from a video that popped up on my facebook wall. The video came from Thrive Market but since then I have seen a few more very similar recipes from different bloggers so I really do not know how came up with the recipe first and do not know who to credit. This is my own take on it. I used wholemeal vienna bread that was a few days old. This is probably why it looks a little darker than normal french toast but you can use any bread you want, including gluten free bread if your avoiding gluten, just make sure it is at least a day old so that it does not go too soggy. I am surprised that my husband prefers vegan french toast over regular french toast since he loves eggs but any time I make vegan french toast he makes sure to tell me that its better than the real thing.

- 4-6 pieces of day old bread of choice
- 1 banana
- ¾ cup almond milk or other non dairy milk
- 1 TBSP spelt flour or gluten free flour of choice
- 1 tsp cinnamon
- 1 tsp vanilla extract
- pinch salt
- 1 TBSP nutritional yeast
- 1 TBSP almond butter
- 1 TBSP maple syrup
- Blend all ingredients ( except bread) in a blender until smooth.
- Empty mixture into a tray
- Dip bread into mixture on both sides
- Heat a fry pan with a little bit of coconut oil or oil of choice
- Fry the bread on low - medium heat for about 1 minute on each side until it forms a nice darkish crust
- Serve with fresh berries and extra maple syrup and anything else you want.
