Tropical Vegan half and half Smoothie Oatmeal Bowl

Around this time of year I get stuck in a fruit rut and eat the same fruits over and over. I literally can not wait for summer produce and all the delicious stone fruit! But then it dawned on me that I live in the tropics and I really don’t make use of the delicious tropical seasonal fruit nearly as much as I should. We have pineapples bananas paw paws and passionfruit available pretty much every time I go to the farmers market but I never really buy any! (Except bananas ) Even when I go out for breakfast to a smoothie place I always order something with chocolate and never try any of the beautiful tropical flavours available. I’ve decided that I want to change that because if I ever leave the tropics I will absolutely regret not making the most of it.

Another reason I don’t seem to do tropical fruity meals is because I simply do not find them filling enough ! Any smoothie I make at home is usually super rich and full of nut butters and oats to keep me as full as possible. But tropical doesn’t pair well with nut butter in my opinion and in general a fruit smoothie will go through me in less than an hour. I really hate feeling the need to snack constantly so I decided to bulk my meal up by adding oatmeal which keeps me full all morning. I am now obsessed with these half and half bowls because I can enjoy fruits or vegetables that I don’t eat all that often but be full at the same time! I also love that I’m giving the baby more variety of fruit and veg too and he really seems to enjoy it.

I would also like to add that the coconut milk I used for this recipe is light . I used my favourite from Pureharvest which is actually half coconut milk half brown rice milk , so it has a much thinner and lighter consistency. It’s very different to canned coconut milk which is very fatty . I find canned coconut milk much too heavy for me so I only use it in desserts but if you like the consistency go ahead and use it.

Ingredients
  • SMOOTHIE:
  • 1 cup mixed tropical fruit fresh or frozen . I used banana, mango, pineapple and paw paw
  • 1 cup light coconut milk
  • OATMEAL
  • ½ cup oats
  • 1 mashed banana
  • 1 TBSP chia seeds
  • ½ cup vanilla coconut yogurt
  • ⅔ cup light coconut milk
  • 1 tsp maple syrup (optional)
  • TOPPINGS:
  • Puffed millet
  • Passionfruit pulp
  • Star fruit slices
  • Kiwi slices
Method
  1. In a blender whiz up smoothie ingredients and set aside.
  2. In a bowl mash banana and add in all other oatmeal ingredients and mix well to combine. Allow to sit for a few minutes for the oats to absorb the liquid or you can leave in the fridge over night.
  3. Add half the oatmeal mixture in one bowl and gather up to one side. Pour the smoothie on the other side of the bowl .
  4. Topp with your favourite toppings and enjoy!
