Quick & Easy Vegan Peanut Butter Granola

The way I feel about this peanut butter granola is a little bit about how I used to feel about Feta Cheese. Feta cheese will make any salad taste good and this granola will make any breakfast taste good too! Breakfast is actually my favourite meal of the day so I don’t actually need a lot of help liking breakfast anymore (I used to) but every once in a while when the baby has had a bad night and I’ve had little sleep , I wake up without an appetite. Then I remember that I can add this granola to anything and I’ll love it! It actually makes me excited to get up even if I wish I could get a few more minutes sleep. The baby loves munching away on this too!

This is a very simple, very quick basic recipe. You can definitely use it as the base and then keep adding ingredients to it to jazz it up even more and make it more nutritious. Choc chips is a nice addition, as well as almonds and cinnamon , coconut flakes, dried fruit etc. personally I prefer it just like this and am a little afraid that adding anything else to it is going to wreck it. But I’m sure I’ll get a little more creative with it eventually.

Providing you use gluten free oats this recipe is gluten free and vegan (no honey ) and just the easiest thing to make! I make a batch every week and it’s so quick that I can have it done in about the same time as it takes me to make a smoothie. The first time I made this my husband actually ate the whole jar at one meal and I was really really upset with him .

Ingredients
  • 2 cups rolled oats
  • ¼ cup unsalted peanut butter
  • ¼ cup maple syrup
  • pinch salt
  • 1 tsp vanilla extract
Method
  1. Mix all ingredients together in a large bowl. Make sure the peanut butter mixed through the oats well and starts to look clumpy.
  2. Transfer to baking tray and bake for 15 - 20 minutes at 180 C turning once. Keep you eye on them so they don't burn. ( my oven is strong so they are done in about 12 minutes)
  3. Allow to cool, store in airtight jar or container.
