Kiwi and Pineapple Popsicles
I have a super quick and easy pot today. Only three ingredients and one that I think kids would love. I made these popsicles because I had a lot of leftover kiwi puree from kiwi coconut chia pudding I made for breakfast that morning (recipe here). I felt so bad wasting all the fruit I just blended up so thankfully I remembered reading an article where you can turn pureed fruit into ice poles. I quickly poured the rest into my popsicle moulds and popped them in the freezer. They tasted just like the icy poles we used to have from the canteen at school, except these are basically 100% fruit instead of ice with artificial colours and flavours. These have quite a sour tart taste so feel free to add more sweetener if you prefer a sweeter taste. Such a quick and easy summer treat.

- 4 kiwi fruits
- half pineapple, peeled and cut into chunks
- 1 tsp raw honey or liquid sweetener of choice
- 4-6 kiwi fruit slices
- Place all ingredients except kiwi slices into blender and blend until smooth.
- Place one kiwi slice on the side of each Popsicle mould.
- Pour the mixture into the moulds.
- Add in Popsicle sticks and freeze for at least 24 hours until set.
- Remove from freezer.
- Run outside of moulds under warm water to remove frosty coating before removing the popsicles. Enjoy.
