Vegan Peanut Butter Caramel Cups

Im not going to lie , these little cups were incredibly hard to style and photograph and I’m not entirely happy with how the turned out . They were also very gooey and messy and it was a complete disaster when the baby got his hands on them. They were however very very yummy and I believe a lot sweeter than many of the desserts I usually make (caramal generally is). I’ve actually had a few comments saying that my desserts are “not very sweet” . To be honest I take that as a compliment because I used to be a huge sweet tooth and wouldn’t eat fruit because I basically found all fruit too sour. Mum used to have to layer on teaspoons of sugar to my strawberries in order for me to eat them (no wonder I ended up with cavities) . So the fact that people don’t find my desserts too sweet is just proof to me of how how far I have come and I couldn’t be prouder! My taste buds have changed so much that any normal chocolate bar made with real refined sugar actually burns my throat on its way down and I legitamely do not enjoy them anymore . To by honest this recipe had a similar affect! So to all the people starting out with healthy desserts I would advise starting out with a recipe like this first! It will definitely satisfy any sweet craving. Enjoy !

 

 

 

 

Vegan Peanut Butter Caramal Cups

Hazel & Cacao:
Ingredients
  • BASE:
  • 1 cup raw cashews
  • 1 cup pitted dates
  • ¼ cup dark chocolate chips
  • 2 TBSP peanut butter
  • Pinch salt
  • PEANUT BUTTER CARAMAL
  • 1 cup pitted dates
  • ½ cup almond milk
  • ½ cup maple syrup
  • 1 TBSP peanut butter
  • Pinch salt
  • CHOCOLATE TOPPING
  • ½ cup dark chocolate chips: melted
Method
  1. For the base process all ingredients in a food processor until sticky and crumby . Divide the mixture evenly in a muffin tray and press into the base of the bottom and sides. set aside
  2. For the caramel, mix all the ingredients together in a food processor or blender until creamy and gooey. Spoon on top of bases and set aside.
  3. Melt down chocolate chips over low heat or double boiler . Once melted pour over caramel evenly.
  4. Freeze for about 4 hours or until chocolate has set.
  5. Enjoy and try not to get too messy!
