Vegan Oat, Buckwheat and Banana Sweet Crepes

I only have one other vegan crepe recipe on the blog and although that recipe is delicious it took me at least five crepes to get it right. It was very difficult to work with and I was a little stressed the whole time I was making it. Lucky for me I have had other people make that particular recipe without having too much trouble with it, so I know that it works! However, I really wanted to try a different vegan crêpe recipe that was a lot easier to make. That’s when I discovered this recipe for sweet banana crêpes on YouTube from an account called nutrition refined. As soon as I saw the video I could tell that it would be really easy to make and that these crepes were not going to give me a lot of trouble,  and I was right! I of course adapted the crêpes slightly to my own liking and kept them entirely gluten-free ( make sure to use specific gluten-free oats if you are very sensitive)

The batter comes together really quickly in the blender. As I am sure many of you already know you do not need to go out and buy expensive oat flower you can simply whiz up your own in a blender or food processor. The finer you make it the better the texture of the crêpes.   For this recipe, I simply just put the oats in the blender first and whizzed them up until a fine flour and then added the rest of the ingredients over the top. Once all the ingredients were in the blender, just blend again until the batter forms. As usual for all crêpe or pancake recipes the first one does turn out horrible but in my case, even the first one was definitely edible!  They have the perfect texture are quite spongy and very easy to roll without cracking around the sides. I know quite a few people are not a fan of banana which is a shame because it makes a great egg replacer for pancakes and crêpes.  It is possible that the recipe may work with apple sauce as well but I have not tried it so I can’t promise that it will work out.

I generally like to fill my crêpes with a healthy vegan Nutella or chocolate of some sort but for this recipe, I thought I would try something different. A friend of mine made a pair and cashew cream that I thought was so simple and delicious. Pears add a nice sweetness without imparting too much flavour. I have not quite perfected the cream recipe but it’s just a mixture of raw pear soaked cashews maple syrup and vanilla.

Vegan Oat, Buckwheat and Banana Sweet Crepes

Hazel & Cacao:
Ingredients
  • ½ cup oat flour
  • ½ cup buckwheat flour
  • 1¼ cup almond milk
  • 1 banana
  • 1 TBSP maple syrup
  • pinch salt
  • 1 TBSP grapeseed oil
  • drop vanilla extract
  • coconut oil spray for frying
Method
  1. if you don't have oat flour, begin by breaking down rolled oats in a blender until they become a flour.
  2. Add the rest of the ingredients to the blender and blend until a crepe batter forms. It should be fairly runny.
  3. Heat frying pan and spray with coconut oil spray.
  4. Add about ⅓ cup batter to a frying pan and spread around as best possible until you get a crepe shape.
  5. Fry for 1-2 minutes and then flip and fry the other side for a few more seconds. you can tell when they are ready when they turn golden in colour.
  6. repeat until you finish the entire batter, adding more coconut oil spray as needed.
  7. Remember the first crepe is always bad.
  8. Enjoy with fillings and toppings of choice.
