Vegan Chocolate Buckwheat Waffles

I have already shared this recipe in instagram, it is actually just a simple adaptation of my basic vegan buckwheat waffle and pancake recipe that I posted not too long ago. However since it is Mothers day, I thought it would be nice to do a blog post about these waffles so I can virtually send my mum some breakfast in bed. If she didn’t live 4000km away this is what I would make her. Hope you enjoy the recipe and maybe make it for your mum!

Vegan Chocolate Buckwheat Waffles

Recipe type: Breakfast
Hazel & Cacao:
Ingredients
  • Waffle mixture:
  • 1 cup buckwheat flour
  • ¼ cup almond meal
  • 1 tsp baking powder
  • 2 TBSP cacao powder
  • 1 tsp vanilla extract
  • 250 ml of coconut milk
  • 2 ripe bananas - mashed
  • Chocolate Sauce:
  • 2 TBSP coconut oil
  • 2 TBSP cacao powder
  • 2 TBSP maple syrup
Method
  1. Mix waffle ingredients together in a bowl until well combined and batter is formed
  2. Cook according to waffle makers instructions
  3. For the sauce: combine all ingredients together in a small bowl and mix until smooth and well combined
  4. Top waffles with chocolate sauce, berries and coconut yoghurt

    How many does this serve?

      It made about 6 all up, so it depends how many you like to eat 🙂 We had 3 each so I guess two people?
