Vegan Chocolate Buckwheat Waffles
I have already shared this recipe in instagram, it is actually just a simple adaptation of my basic vegan buckwheat waffle and pancake recipe that I posted not too long ago. However since it is Mothers day, I thought it would be nice to do a blog post about these waffles so I can virtually send my mum some breakfast in bed. If she didn’t live 4000km away this is what I would make her. Hope you enjoy the recipe and maybe make it for your mum!

Hazel & Cacao: Hazel & Cacao
Ingredients
- Waffle mixture:
- 1 cup buckwheat flour
- ¼ cup almond meal
- 1 tsp baking powder
- 2 TBSP cacao powder
- 1 tsp vanilla extract
- 250 ml of coconut milk
- 2 ripe bananas - mashed
- Chocolate Sauce:
- 2 TBSP coconut oil
- 2 TBSP cacao powder
- 2 TBSP maple syrup
Method
- Mix waffle ingredients together in a bowl until well combined and batter is formed
- Cook according to waffle makers instructions
- For the sauce: combine all ingredients together in a small bowl and mix until smooth and well combined
- Top waffles with chocolate sauce, berries and coconut yoghurt
How many does this serve?
It made about 6 all up, so it depends how many you like to eat 🙂 We had 3 each so I guess two people?
