I don’t think my silken tofu chocolate mousse recipe is going to differ very much from the hundreds maybe thousands other silken tofu mousse recipes on the internet, but I had to blog my own recipe too because of all the mousse recipes I have tried this is the absolute most authentic tasting. It tastes just like the chocolate mousse I remember having at my favourite Italian restaurant when I was younger. I have even had people write in to tell me that they make this version of chocolate mousse for their not so healthy friends and relatives and absolutely nobody can tell the difference. I think that’s great because I think even if I wasn’t plant-based, I would still opt for this recipe because it is a million times easier than a traditional chocolate mousse.
Generally, I like to use quite dark chocolate, my favourite is 85% which is what I have used in this recipe. I will say though that if you go that dark, the mousse is not very sweet so there is a need to add a little extra sweetener. If you go for a chocolate of around 70-75% or lower this should not be an issue. Personally I wouldn’t go lower than 70% because the tofu takes away the dark chocolate taste quite a lot so you don’t want it to be flavourless. I think when dealing with dark chocolate even one that is sweetened with refined sugar is generally ok because the percentage of sugar is so low. I think I only get about 2 grams of sugar in a serving of chocolate that is 85%, however, I also do love to use raw chocolate that uses natural sweeteners for my desserts. Any chocolate will work, so go with a flavour you like and also a type of chocolate that is suited to your health needs.
You can serve the mousse with whatever you like. Berries are always a nice addition that will provide a nice hit of vitamin c to help with iron absorption, but some vegan whipped coconut cream and chopped nuts would also be super decadent. I think this has become my new favourite dessert to whip up especially for last-minute guests or something like that.
In terms of hormone health, this is the perfect dessert! It has some of my most favourite hormone friendly ingredients and is loaded with essential nutrients for hormone health. The chocolate provides the magnesium and iron (provided it is good quality dark chocolate) and the tofu provides beneficial phytoestrogens, extra calcium, and more iron. I ended up adding maple syrup to my mousse because I used very dark chocolate, this actually adds even more iron. Its a wonderful treat for low iron and to help replenish stores post menstruation.
This recipe is vegan, plant-based, dairy-free, refined sugar-free, gluten-free. enjoy.
