I stumbled across a random picture on instagram where someone was saying that they didn’t like raw desserts because they were too rich and coconuty. Needless to say I was a little appalled because I LOVE raw desserts. Raw desserts helped me on my way back to health. When I was still struggling with my appetite, raw desserts helped me get nuts and seeds into my diet, which are so important for a huge range of vitamins, minerals and also healthy fats and plant based protein. I was never much of a snacker and no matter how hard I tried I simply didn’t enjoy munching on a handful of nuts in order to get the nutrients I needed. In step raw deserts and it made eating nuts, seeds and healthy fats the best thing in the world. But it did get me thinking. Some people really just don’t like the taste of certain foods. I can’t blame them. I am still an extremely fussy eater. I can’t handle spicy food and am often quite afraid to try intense flavours. Plus I personally have a pretty deep hatred for cooked cabbage. Its disgusting and smells like garbage. I know it’s really good for me, but sometimes you can’t help what you don’t like. I have actually noticed coconut is a big one for people; some people just don’t like it. Raw desserts use so much coconut because it acts as the firming agent that helps the desserts maintain their shape. I’m not really aware of other alternatives except for cacao butter but that only works in chocolately treats. So keeping in mind that some people do not like coconut, and the fact that I’m trying to capitalize on the lower than usual price of figs at the moment I wanted to share this recipe for raw vegan fig slice. It basically just tastes like fruit and nut, is very sweet and nutritious. Yes it does still have coconut oil but I do find that the sweet taste of figs overpowers it and I don’t taste it at all. Raw Fig Slice

Hazel & Cacao:
Ingredients
  • Base:
  • 1 cup hazelnuts
  • 1 cup medjool dates
  • Filling:
  • 2 cups cashews (soaked for at least 4-5 hours)
  • ⅓ cup coconut oil
  • 1 cup dried figs
  • juice of 2 limes
  • ½ cup water
  • 2 TBSP maple syrup
  • fresh fig slices to decorate
Method
  1. Process hazelnuts in a food processor until they turn into a fine flour
  2. Pit your dates and add them to your food processor. Process until mixture becomes sticky
  3. Press mixture into the bottom of a small slice tray and set aside
  4. Blend all filling ingredients in a blender until thick and creamy. You may need to add a little more water as you go to help it blend
  5. Scoop filling over your base and spread out evenly
  6. Set in freezer for about 5 hours or overnight
  7. When you are ready to serve, decorate with fresh fig slices and cut slice into desired shape. Enjoy!
