Vegan Lemon Poppy Seed Load With Whole Lemon

Ingredients
  • ¾ cup maple syrup
  • 1 whole lemon
  • ½ cup vegan yogurt (I used soy)
  • ½ cup plant milk
  • 1 tsp vanilla extract
  • 1¾ cups wholemeal spelt flour
  • 2 tsp baking powder
  • Pinch salt
  • ½ tsp turmeric powder
  • ⅓ cup poppy seeds
  • FROSTING:
  • Soy yogurt mixed with maple syrup and vanilla (optional)
Method
  1. Add all ingredients to a high speed blender and blend until smooth. This may take a few minutes. Transfer to a lined baking tin and bake at 180C for 40 mins or until a toothpick comes out clean. Once baked, drizzle with some extra yogurt as frosting if desired.
