Oat and Banana Breakfast Cookies

Ingredients
  • 2 ripe bananas
  • ½ tsp cinnamon
  • ¼ cup maple syrup
  • 2 TBSP hemp protein powder or hemp seeds
  • 2 cups quick oats
  • 2 TBSP pumpkin seeds
  • ⅔ cup cashew butter (or nut butter of choice)
  • ⅓ cup dark chocolate chips
Method
  1. Mash bananas in a large bowl with a fork.
  2. Add all ingredients to the bowl and mix well to combine.
  3. Form cookie shapes with your hands and line cookies on a baking tray.
  4. Bake for 15-20 minutes at 180C or until edges become golden.
