Oat and Banana Breakfast Cookies

Serves: 12-16
- 2 ripe bananas
- ½ tsp cinnamon
- ¼ cup maple syrup
- 2 TBSP hemp protein powder or hemp seeds
- 2 cups quick oats
- 2 TBSP pumpkin seeds
- ⅔ cup cashew butter (or nut butter of choice)
- ⅓ cup dark chocolate chips
- Mash bananas in a large bowl with a fork.
- Add all ingredients to the bowl and mix well to combine.
- Form cookie shapes with your hands and line cookies on a baking tray.
- Bake for 15-20 minutes at 180C or until edges become golden.
