Raw Walnut Brownies with Coconut Cream Frosting

Ingredients
  • BROWNIE:
  • 2 cups raw walnuts
  • 1½ cups pitted dates (soaked in water for 10 minutes to hydrate then drained)
  • ⅔ cups cacao powder
  • ½ cup almond meal
  • ¼ cup maple syrup
  • FROSTING:
  • 1 cup coconut cream
  • 80g dark chocolate ( I use 85%)
  • ⅙ cup maple syrup
  • ¼ cup nut butter of choice ( I used almond and pecan blend)
Method
  1. In a food processor, blitz the walnuts until finely ground and almost resembling nut butter. This can take a few minutes. Add all remaining brownie ingredients and blitz again until sticky.
  2. Press down evenly onto the base of a lined square 10cm baking dish and set aside.
  3. For the frosting, add all ingredients into a saucepan and melt over low heat until a smooth thick sauce forms. Pour over brownies and smooth with a spatula. Sprinkle with crushed walnuts.
  4. Place in the fridge to set for about an hour.
  5. Once set, slice into squares and enjoy.
