Black Bean Sweet Potato Patties

Ingredients
  • 2 small-medium sized sweet potatoes
  • 1 brown onion
  • ½ tsp salt
  • 2 tsp taco seasoning (or to taste)
  • 1 flax egg (1 TBSP ground flaxseeds mixed with 3 TBSP water)
  • 1 x 400g black beans (drained and rinsed)
  • 1 cup spinach
  • 6 TBSP bread crumbs (use gluten-free if necessary)
Method
  1. Pierce sweet potato with a fork all over. Place in the microwave and microwave for about 20 minutes until the sweet potato is cooked.
  2. In the meantime, add all remaining ingredients to a food processor. Once the sweet potatoes are cooked, slice them lengthways and add sweet potato flesh to the food processor.
  3. Process until a tacky mixture forms.
  4. Roll into balls and cook in an air fryer for 10 - 12 minutes or cook in the oven at 200C for 30 minutes.
