6 TBSP bread crumbs (use gluten-free if necessary)
Method
Pierce sweet potato with a fork all over. Place in the microwave and microwave for about 20 minutes until the sweet potato is cooked.
In the meantime, add all remaining ingredients to a food processor. Once the sweet potatoes are cooked, slice them lengthways and add sweet potato flesh to the food processor.
Process until a tacky mixture forms.
Roll into balls and cook in an air fryer for 10 - 12 minutes or cook in the oven at 200C for 30 minutes.
