Ingredients
  • 1 cup ripe mashed banana (about 3 medium bananas)
  • ⅔ cup peanut butter or nut/seed butter of choice
  • ½ cup flaxseed meal (ground flax seeds)
  • 2 tsp maple syrup (optional)
  • 1 tsp vanilla extract (optional)
  • 1 tsp cinnamon ground (optional)
  • pinch salt (optional)
  • melted dark chocolate (optional)
Method
  1. Begin by grinding flax seeds in a high-speed blender until finely ground. Measure out ½ cup and reserve the rest for the freezer for other recipes (grinding flax seeds often gives a larger amount).
  2. Combine all of the ingredients except the chocolate together in a bowl. Mix well to combine. Allow the mixture to sit for about 5-10 minutes to allow the flax seeds to absorb some of the liquid.
  3. Transfer mixture into a lined 10 cm square baking tin and press down evenly.
  4. Bake in the oven at 180 C for about 15 -18 minutes or until the centre is firm and the edges are hard and lightly browned.
  5. Remove from the oven and allow to cool completely before slicing. Slice into squares of the desired size.
  6. Be creative and add in any other ingredients to the batter like chopped nuts and different spices and switch things up whichever way you like
