Vegan Nectarine Tofu Custard Yogurt Pots

  • 1 x 300g organic silken tofu
  • 2 TBSP maple syrup
  • ⅓ cup raw cashews
  • 1 tsp vanilla extract
  • 2 nectarines (stone removed)
  • juice ½ lemon (optional)
  1. Cut nectarines in half and remove the stone.
  2. Simply add all the ingredients into a blender and blend until smooth. Lemon is optional for a more tart flavour. If you prefer sweet you can leave it out.
  3. Serve with extra fruit, nuts and seeds or granola.
