½ cup rolled oats ( used gluten free if necessary)
½ cup dark chocolate chips
⅓ cup chopped walnuts
Pomegranate seeds to decorate ( optional)
Method
Place all of the ingredients except the chocolate chips and walnuts into a food processor
Blitz together until a smooth batter is formed
Fold in chocolate chips and chopped walnuts with spatula - do not pulse again
Transfer mixture in to a lined square brownie tin of your choice
Bake at 180 C for 20 - 30 minutes, or until a tooth pick comes out clean. You may need to experiment a little with the baking time as each oven is different. The brownies are quite moist at first but firm up a fair bit when cooled.
Allow to cool and cut into brownie squares. Decorate with pomegranate seeds or with whatever toppings you like
